I seem to have lost the photo of the bento these were in, oh well. These are easy lunch box ideas, take 5 minutes or less to prepare and 20-25 minutes to cook in the oven (or 90 seconds for the quiches in the microwave), and received good reviews. I suspect they would all freeze well, although I haven't tried yet. The egg cups would also be good in a breakfast, and good if you need to cook for a dozen people at once.
Quiche Recipe:
1 tbsp frozen corn, 1 tsp bbq sauce
OR
1 tbsp frozen peas, 1 tsp soy sauce
OR
1 cube cheddar, 1 tbsp diced green onions
AND
1 egg, beaten together, poured into a muffin cup (silicone is required for microwaving, and also, is handy)
Microwave for 90 seconds
OR
bake in a 120C/350F oven for 20 minutes, or until completely solidified. garnish with nori.
For more even cooking, the bbq sauce should probably go on top after cooking. For best results, defrost the frozen vegetables, but I'm too lazy for that and it worked out fine.
Baked Pakora Recipe:
Microwave a scrubbed, rinsed, pricked potatoe for 6 minutes on high in a 700W microwave (adjust times to your wattage). Let it cool, and chop in 1cm dice.
1 tbsp diced potato, 1 small handful chopped spinach (if using frozen, microwave until defrosted, then dry well with paper towel)
mix into a batter made of:
1 heaping tbsp chickpea (or regular wheat) flour
4 tbsp water
1 tbsp curry powder
pour into 2 muffin cups, bake at 120C/350F for 20 minutes or until brown and crispy.
In the photo above, I tried using red pepper and potato and red pepper and spinach, but the pepper made them too moist. should have cooked those ones for an extra 5 minutes.
